Suki Pantal, founder of Suki’s Curries and Spices, is a Worcestershire-based cookbook author, culinary teacher, food columnist and speaker. She conducts live demonstrations, virtual cookery classes and talks, across the UK, sharing her passion for Indian cuisine.
Born and raised in New Delhi, Suki specialises in regional Indian recipes, bringing authentic and diverse flavours of India to her cooking. Her debut cookbook, Garnish with Garam Masala, was released earlier last year, featuring a collection of her favourite family recipes from her childhood in New Delhi, alongside hidden regional gems from across India, celebrating the rich culinary heritage passed down through generations.
In 2022, she participated in The Great Cookbook Challenge with Jamie Oliver on Channel 4, where she presented her Butter Chicken dish from Old Delhi. She actively showcases her love for regional curries at food festivals, using them as a platform to celebrate and share India’s distinct culinary traditions.
Suki’s 2nd book, ‘No Worries, Just Chicken Curries’, was published late last year by Nourish Books. In this book, she’s on a mission to introduce readers to a treasure trove of homegrown and regional chicken recipes, celebrating the versatility and affordability of this beloved meat.

This year at Springfest26, Suki took us back to her homeland of Punjab, with recipes close to her heart, and memories of time spent with her maternal grandparents…

This Amritsari Murgh (Punjabi Chicken Curry) is an ode to the vibrant city of Amritsar, a tribute to her heritage and a dish that we are delighted she shared with us. 

She has paired it this time with her Green Beans Fry, a super-easy, quick side dish that goes with any chicken curry. It’s packed with delicious spices and ginger, and has a real ZING to it!
